Engelsaugen - Angel's eyes

  • 250 g softened butter
  • 125 g sugar
  • 3 egg yolks
  • Some grated lemon peel
  • 375 g flour
  • Currant Jelly
  • Icing sugar for dusting


Whisk the butter and sugar with a blender until you get a creamy consistency.

Add the egg yolks and lemon zest and knead in the flour. Cover and leave to rest for a while in the fridge.

Form small balls from the dough and place them on a baking tray covered with baking paper. Make a little dimple in the middle of the balls (for example with your little finger or the handle of a wooden spoon) and fill with the currant jelly.

If the jelly is too firm, warm it up a little beforehand. Bake the cookies in a preheated oven at 180 °C for approx. 10-15 minutes.

Let the cookies cool down on a cake rack. Dust the cold cookies with icing sugar.
