Spitzbuben (Rogues) and Terrassenplätzchen (terrace cookies)

This recipe is one of the most popular basic recipes for German Christmas cookies. It is also very versatile, as you can make (at least) two different types of cookies with just one recipe.

Ingredients for about 60 Spitzbuben or 40 Terrassenplätzchen

for the shortcrust pastry:

  • 350 g flour
  • 125 g sugar
  • 1 packet of Bourbon vanilla sugar
  • 1 pinch of salt
  • Grated zest of 1 untreated lemon
  • 225 g cold butter
  • 1 egg yolk

for the filling:

red jam or jelly (e.g. from currants, raspberries, rose hips), also lemon curd is a very tasty filling

Also: flour for the work surface and icing sugar for dusting


Sieve the flour onto the work surface, add sugar, vanilla sugar, 1 pinch of salt and the lemon zest.

Spread the cold butter in slices on top. Make a hollow in the middle and add the egg yolk. First roughly chop everything up, then quickly knead it into a shortcrust pastry with your hands.

Shape into a ball, cover it and put it in the fridge for 30 minutes.

Preheat the oven to 190°C. Line the existing baking trays with baking paper. Roll out the dough on the thinly floured work surface to a sheet about 3 mm thick.

For the Spitzbuben, cut out circles (about 3-3.5 cm in diameter) from half of the dough and rings of the same diameter from the other half.

For the Terrassenplätzchen, cut out biscuits with a star or flower cutters in two or (better) three different sizes. 

Place them on the trays and put it in a cool place briefly once more. Bake in a preheated oven for about 8 to 10 minutes until light yellow. Let them cool down on cake racks.

Now put the biscuits together with red jam.

Jelly, which is made from the juice of the fruits and therefore contains no fibres or fruit pieces, is best suited for this. If the jelly is very firm, warm it slightly before filling and stir until smooth.

If jelly is not available, jam can also be used. Warm the jam before filling and pass it through a sieve to obtain a homogenous mass. For the Spitzbuben, spread a circle with the filling and put a ring on top.

For the Terrassenplätzchen, put three biscuits of different sizes together. Dust the filled biscuits with icing sugar.
