15th door of the Advent calendar
- 2 untreated oranges
- 3 eggs
- 1 pinch of salt
- 150 grams of sugar
- 2-3 tablespoons of orange liqueur or juice
- 275 grams of desiccated coconut
- 100 grams of dark chocolate
Preheat the oven to 175°C / fan oven 160 °C
Rinse oranges with hot water and rub dry. With a zest peeler, peel off the zest in fine strips or thinly peel the orange and cut the peel into thin strips.
Beat the eggs and salt with the hand mixer until frothy. Gradually add the sugar. Stir in the orange liqueur and orange peel and fold in the desiccated coconut.
Using two moist teaspoons, place small mounds of the mixture on a baking sheet lined with baking paper and bake for eight minutes.
Switch off the oven and let the coconut flakes dry for a further twelve minutes in the slightly open oven (wooden spoon in the door).
Melt the dark chocolate in a hot water bath (a bain marie) and dip the cooled coconut flakes with the underside in the chocolate. Leave to firm up on the baking paper.
